In 1983, Randee and Don Disraeli decided to take the plunge into the seafood business, and created Kanaloa, a seafood sourcing, processing and distribution company focused on responsible environmental practices. Their mission statement is the Hawaiian word "Kina’ole," which means “doing the right thing, in the right way, at the right time, in the right place, to the right person, for the right reason, with the right feeling… every time.”
From the beginning, they were committed not only to doing their part to preserve our oceans, but to educate on the vital necessity of continuous efforts toward a truly sustainable global fishing industry. Asparagus Festival Menu
Now through April 13
Asparagus is the Royal Vegetable Troubadour that announces the arrival of Spring. Accordingly, Morgan's asparagus festival explores the personalities of the Royal Ivory and Purple Passion asparagus. The famous white asparagus of European descent is naturally light in color, while the Purple Passion varietal exhibits green stalks with a purple-hued crown and is considered one of the most flavorful varieties of asparagus. For this menu, Chef Jimmy Schmidt has paired the delicately flavored Royal Ivory asparagus with shaved chanterelles and aged Parmesan cheese in a Meyer Lemon Emulsion. The bold Purple Passion comes forward to meet the powerful flavors of Vanilla and Ginger, both in a caramelized and raw role.
