Vidalia Onion Festival Menu

The famous Vidalia Sweet Onion is named after the town of its origin in central Georgia, where it has been designated the official state vegetable since 1990.
The Vidalia Onion is actually the same hybrid yellow granax grown elsewhere that makes your eyes tear up. When Georgia farmers first planted these onions during the Great Depression, they were surprised and concerned by its unexpected sweetness.
What makes it so sweet is the local terrior or soil, which is considerably lower in natural sulfur content than other locales. The mild climate allows the onions to be planted in the Fall and mature slowly through the cooler winter with a early Spring harvest.
This festival menu explores all the personalities of the Vidalia Onion—from raw crisp, to pickled, to roasted sweet. We'll use the seeds to cure and crust, and we'll even put the papery skins to work as we roast. Come celebrate these truly unique early Spring earthen flavors with us!
