In addition to its culinary appeal, garlic has also been considered to deliver many health benefits, including reducing blood pressure, preventing cancer, fighting infection and increasing stamina. Many cultures also regard garlic as a potent aphrodisiac.
When chopped, crushed or pressed, garlic releases allicin, an oily, yellowish liquid that gives garlic its unique odor. This is why garlic’s scent is most potent when cut or cooked. Morgan’s secret is to slice the garlic paper thin, releasing the least amount of allicin and allowing the sweeter, milder personality of garlic to emerge.
