Asparagus Festival Menu

Asparagus is the Royal Vegetable Troubadour that announces the arrival of Spring. Accordingly, Morgan's asparagus festival explores the personalities of the Royal Ivory and Purple Passion asparagus.
The famous white asparagus of European descent is naturally light in color and achieves its ivory hue from the process called etiolation or the absence of light. The Purple Passion varietal exhibits green stalks with a purple-hued crown is considered one of the most flavorful varieties of asparagus.
For this menu, Chef Jimmy Schmidt has paired the delicately flavored Royal Ivory asparagus with shaved chanterelles and aged Parmesan cheese in a Meyer Lemon Emulsion. The bold Purple Passion comes forward to meet the powerful flavors of Vanilla and Ginger, both in a caramelized and raw role.
$55 per person, which does not include tax and gratuity. Wine pairing available for $19 per person plus tax and gratuity, for two glasses of wine.
