Artichokes are a giant perennial thistle plant of the sunflower family, whose giant vegetable blossom matures into a colorful purple flower. The giant prickly bush plant yields the largest artichokes at the top of the main stems, while the "baby" artichokes are tiny side shoots from the same stem.
Although there are more than 140 different varieties of artichokes, we are partial to those that are grown in our east desert. You'll enjoy artichoke hearts grated raw, swirled with fennel hearts and naturally fermented into a rich slaw to nestle the first of the soft crab molters. Our favorite baby artichokes will become the rich broth to flood sprouted lentils, laden with roasted garlic and even more baby artichoke hearts, topped with tiny fire splashed sweet and nutty Joseph Decuis Wagyu Beef.
For dessert, we've swirled the artichoke aperitif Cynar with Absolut Hibiskus to make a seductive gelato. Cynar contains Cynarine, a natural chemical that makes foods and even water taste sweeter. This unique Cynar gelato will sweeten up the local desert grapefruit to a broader, rich taste sensation that will amaze your palate.

The Garbo Gimlet
The original desert hideaway of Hollywood celebrities, La Quinta Resort was a favorite destination for Greta Garbo. Not only did Garbo crave the privacy she enjoyed here, she also enjoyed the abundance of citrus trees around La Casa, the home she leased at the resort. Morgan's in the desert has memorialized the movie star with the Garbo Gimlet, also known as "the GG." You won't see it on the menu — but if you enjoy a good gimlet, ask your bartender for the Garbo when you next visit Morgan's!
Garbo Gimlet
.75 oz. simple syrup
.75 oz. fresh lime juice
2 oz. Death Door Gin
Combine in a shaker and shake vigorously until crystals form; serve in a martini glass and garnish with a lime twist.
